I would like to have a sit down meeting first, learn about you. Learn about your skills that you may have already in the baking world, learn what motivates you to create (your muse) and why you're wanting to learn.
Have an open mind... be ready and willing to learn. I used to think I knew everything about there was to baking, but with each job I took... I learned more and more and honed in on my craft.
