About Gustavo Rubén
I am a university-trained biotechnology engineer with a master's degree and a Ph.D. of science specializing in food technology. I have extensive academic experience in research, with special emphasis on fruit quality and the health benefits of its bioactive compounds. I am the author of 30 publications, including research articles and book chapters, related to the development of new technologies applied to food and the evaluation of its nutritional characteristics.

I believe that the key to a correct learning of any subject is a strong foundation of the basic concepts.
