About Gustavo
I never went to culinary school, and that’s exactly why I teach the way I do. The kitchens that shaped me weren’t classrooms — they were high-heat, high-stress proving grounds where real chefs are made. I earned every stripe the hard way: starting in the dish tank, showing up four hours early just to work for free, mastering the basics before touching the grill, and learning firsthand that good food never lies. While universities create chefs who skip the fundamentals, I built my career on them — knife sharpening, eggs, discipline, repetition, and respect for the craft. My path took me from the gritty kitchens of Southwest Detroit to a Michelin restaurant where I cooked $400 steaks, practiced artisanal butchery, and learned to handle premium ingredients with precision and care. I later became a Production Manager at a USDA meat processing facility, where food safety, sanitation, and efficient handling of large-scale operations weren’t optional — they were my daily responsibility. I can butcher any mammal with accuracy, break down whole animals nose-to-tail, and preserve the integrity of every cut. I cook Kosher when needed, honoring the religious and cultural standards that shape someone’s relationship with food. I make sourdough bread from scratch, pasta from scratch, and I maintain every tool I use, from carbon-steel knives to garden equipment. A true chef doesn’t throw tools away — he repairs them. Buying a new knife because the old one is dull is a symptom of a weakened culinary culture. And this culture is suffering: social media “chefs” waste food for entertainment, gratuity systems reward the front of house while the back bleeds for 12 hours, and culinary schools turn out graduates who skip the basics but expect the world. I refuse that system. I believe a chef should be waste-minded, frugal, skilled, and deeply connected to the home and the soul of food. I teach because cooking is more than technique — it’s respect, discipline, and a way of life. My goal is simple: to help students restore integrity to the craft, elevate their skill set, and bring real love back into their kitchens. I teach the fundamentals universities forgot, the fire that only real kitchens give, and the mastery that comes from doing things the right way, not the easy way.

Perfect! Gustavo is great! He has a great deal of knowledge and experience. I made yellowtail sashimi as more of a crudo with cilantro, olive oil, lime, and pickled ginger on my first lesson. Very healthy and fresh!
